Heat cream and milk over medium high heat, until edges begin to simmer. Remove from heat.
Whisk egg yolks in a separate bowl, very slowly adding in half the cream/milk mixture.
Return cream/milk mixture to medium heat, add the remaining egg yolks, stirring constantly. Continue to stir until the mixture thickens slightly. Remove from heat.
Add chocolate and salt to cream, allowing the cream to sit over the chocolate. Let sit, allowing the chocolate to melt.
Whisk together to combine the chocolate thoroughly.
Pour into 8 oz ramekins (or smaller - these are quite rich!) and chill in the fridge for several hours.
Top with berries, whipped cream and sprigs of mint.
